Fortunately, there are more locally owned restaurants here than big chains. Unfortunately, that means that when we want to review restaurants for you, we don&#8217;t have a lot of choices. Our mission is to help you make better choices, so we took our tastings on the road to find some restaurants that are more widely available. This time we were in the Washington, D.C. area.</p>
<p style="font-family: Tahoma, verdana, helvetica; font-size: 12px; color: #333333; line-height: 22px;">Our first stop was The Daily Grill. This is a chain that we have reviewed before, back in 2010, and they have some good choices, but they have now developed a menu with dishes under 600 calories. There were too many great choices for us to try them all, but these options include such things as a simple grilled salmon or petite filet. They have a small version of their Thai Chicken Salad (we have given this good marks in the past) and a blackened ahi tuna salad. <a style="color: #006600;" href="http://www.drgourmet.com/reviews/020312.shtml">A Tale of Two Grills</a></p>

It&#8217;s spring and in the past I would certainly have used pastas. One was a<a style="color: #006600;" href="http://www.drgourmet.com/recipes/salad/sweetpotatosalad.shtml">Sweet Potato Salad</a> that I made to go with the pork tenderloin. The other, a<a style="color: #006600;" href="http://www.drgourmet.com/recipes/salad/cuminblackeyecorn.shtml">corn and black eyed pea salad was spicy with cumin</a> and also worked with the leftover pork really well.</p>

<p style="font-family: Tahoma, verdana, arial; font-size: 12px; color: #333333; line-height: 22px;">I have been thinking about crusts for the last few weeks. What about things like oven fried chicken? In the past I have used melba toast as it&#8217;s dry and crunchy and holds up really well. I started experimenting with corn tortillas, grinding them and using them for crusts. Tonight I perfected that with a <a style="color: #006600;" href="http://www.drgourmet.com/recipes/maincourse/chicken/tortillachicken.shtml">Tortilla-Crusted Chicken.</a> It&#8217;s really fine but getting the same crispiness will be a challenge I think.<a style="color: #006600;" href="http://www.drgourmet.com/column/dr/2012/013012.shtml">Living with Celiac Disease, Part IV</a></p>

One thing to keep in mind with this recipe is to cook the sauce long enough so that it is fairly thick. The eggplant will give up a fair amount of water while baking, and if the sauce is too thin, the &#8220;lasagna&#8221; won&#8217;t hold together well.</p>

The first is fish sauce. Fish Sauce is an all purpose Asian flavoring used throughout Southeast Asia. A Vietnamese friend of mine said to me once, &#8220;we put it on everything.&#8221; It is essentially a concentration of anchovies and brings an umami flavor to dishes much like soy sauce does. Like soy sauce, it is very salty with a tablespoon having as much as 1,500 mg. Thai Kitchen brand is in most stores and contains about 700 mg of sodium per tablespoon, so it is a fair alternative, but use sparingly.</p>
<p style="font-family: Tahoma, verdana, arial; font-size: 12px; color: #333333; line-height: 22px;">Most Thai dishes like this one are more authentic using shiitaki mushrooms but I like the thickly sliced crimini. They are meatier and give the soup more texture (and are about 1/3 the cost of shiitaki).</p>
<p style="font-family: Tahoma, verdana, arial; font-size: 12px; color: #333333; line-height: 22px;">Lastly, I have been using a great brown rice noodle that is on the market now for all recipes that call for cellophane or rice noodles. It has a lot more fiber. The brand is Annie Chun&#8217;s.</p>

<p style="font-family: Tahoma, verdana, arial; font-size: 12px; color: #333333; line-height: 22px;">Met with a friend who has celiac disease this afternoon. A very interesting and eye opening experience. She was nice and mentioned that there were only a few things on the Dr. Gourmet Web site that she felt were an issue and they were minor. She had parsed through the info and had about 10 items that needed attention. I felt pretty good because she said that even the best of gluten free Web sites have a lot more problems and she was impressed.</p>

It should be so easy and I am not sure how any chef could get it wrong. There is no added salt. The clam broth that is reserved and strained after steaming the clams has a salty flavor and adds so much to the depth of the soup.</p>

We were having dinner together not too long ago, and he said that one thing he really missed, besides pizza, was stuffed pasta dishes. Sure, the gluten-free pastas he could make at home were good, but on top of not being able to go to Italian restaurants, he couldn&#8217;t even find gluten-free shells suitable for stuffing.</p>
<p style="font-family: Tahoma, verdana, helvetica; font-size: 12px; color: #333333; line-height: 22px;">Fortunately I was at Winn-Dixie the other day and noticed the Caesar&#8217;s Pasta Specialties in their frozen foods section. A couple of years ago we reviewed their gluten-free cheese and vegetable lasagnas, which were really good. Pricey, but good. In the past we&#8217;d looked at the two meals we&#8217;re reviewing today and passed on them because the amount of sodium in them is on the high side, but after my friend lamented his lack of stuffed pastas I thought we&#8217;d try them. After all, our motto is &#8220;We eat it, so you don&#8217;t have to.&#8221; Even less frequent are those letters that tell us about a product you enjoy and want to let us know about. It was one such letter that inspired us to start reviewing veggie burgers.</p>
<p style="font-family: Tahoma, verdana, helvetica; font-size: 12px; color: #333333; line-height: 22px;">Unfortunately, Whole Foods was out of the Morningstar Farms Black Bean Burger she recommended (sorry, Diane!), but we&#8217;ll get to it in a future review. While looking for the Black Bean Burgers I spotted a similar product from a company that specializes in vegetarian and vegan products that are also gluten-free: Sol Cuisine. While I am not a fan of convenience foods, I do realize that people are going to eat them, but it seems impossible to create a nugget that would amount to anything tasty. The fact is that most are eaten by kids, so finding one that is better tasting and better for your child is an accomplishment.</p>
<p style="font-family: Tahoma, verdana, helvetica; font-size: 12px; color: #333333; line-height: 22px;">Three weeks ago we reviewed our first Saffron Road product after having avoided them for some time due to their not being widely available. All of the products we&#8217;ve tasted are good and a couple quite good. I saw their chicken nuggets and did avoid them because they are, after all, chicken nuggets, but thinking about this it seems that if anyone could make a good nugget, it would be Saffron Road. Their meats are humanely raised, antibiotic free, certified halal and many of their dishes are gluten free. <a style="color: #006600;" href="http://www.drgourmet.com/reviews/091611.shtml" target="_blank">Saffron Road Chicken Nuggets</a></p>

We&#8217;ve found time and again that you can&#8217;t always rely on a brand every single time and that even those that we have raved about for one selection, the next might not be so great. When I saw two that we hadn&#8217;t tried I jumped at the chance to break their streak.</p>

<p style="font-family: Tahoma, verdana, helvetica; font-size: 12px; color: #333333; line-height: 22px;">Today is no exception. We have two meals from Gluten Free Cafe, a brand that has gotten uniformly good reviews from us here at Dr. Gourmet. The first we tried is a new variety: Savory Chicken Pilaf, which is described as &#8220;marinated white meat chicken with almonds, sweet raisins and red peppers with rice pilaf.&#8221;</p>
<p style="font-family: Tahoma, verdana, helvetica; font-size: 12px; color: #333333; line-height: 22px;">This meal smells terrific while cooking and the white rice has a bright curry flavor without being too spicy. Certainly, demand drives supply and with so many people going gluten free, because of being diagnosed with Celiac Disease or by choice, you don&#8217;t have to go to Whole Foods or a specialty market anymore.</p>

Stomach pain, diarrhea and bloating, some of the more common symptoms of Celiac, can also mean anything from gallbladder disease to Irritable Bowel Syndrome (IBS). There is good research, for instance, that shows those diagnosed with IBS are four times as likely to actually have Celiac Disease. We&#8217;ve reviewed a number of burritos in the past with mixed results but only recently are there gluten free versions in the freezer case.</p>
<p style="font-family: Tahoma, verdana, arial; font-size: 12px; color: #000000; line-height: 22px; ">When I took the Amy&#8217;s Gluten Free Cheddar Cheese burrito out of the wrap I noticed that the tortilla looked smooth. Not at all textured like a corn tortilla should but more like a flour tortilla. It seemed odd.</p>
<p style="font-family: Tahoma, verdana, arial; font-size: 12px; color: #000000; line-height: 22px; ">Using the microwave instructions the burrito was ready in about 2 1/2 minutes. It smelled promising. Tastewise, it was OK. There&#8217;s a pinto bean and brown rice filling spiced just as you would expect and the cheddar cheese makes it creamy and rich. Tasters liked it. <p style="font-family: Tahoma, arial, helvetica; font-size: 12px; color: #000000; line-height: 22px;">Is raw milk as bad for celiacs as processed milk? Also, would I need to stay away from yogurt and kefir? (I cannot take probiotics in capsule form.)</p>

Should I try this supplement?</p>

There are not many that are necessary and taking supplements has, in some cases, been associated with poorer health outcomes.</p>

There was only one version there – the Three Cheese pizza.</p>

A few days later I was back at the store, meandering about  looking for something else, and I passed the freezer case and there was  another Against The Grain pizza: Nut Free Pesto. Some folks use  saltine crackers and others day old bread, but for this gluten free  version the crumbled rice cakes work surprisingly well. They&#8217;re actually  better than the &#8220;regular&#8221; crab cakes.</p>

It&#8217;s such a part of our culture and there&#8217;s not any way to go to the pizza parlor and feel too terribly safe about even a crust that&#8217;s labeled gluten free given the risk of cross contamination. We&#8217;ve reviewed <a style="color: #006600;" href="http://www.drgourmet.com/reviews/092410.shtml" target="_blank">pre-made pizza crusts</a> and they could be best described as OK. Not great, not even good but not bad. Just OK.</p>
<p style="font-family: Tahoma, verdana, arial; font-size: 12px; color: #000000; line-height: 22px;">Making pizza dough can be a bit daunting for some folks although it&#8217;s actually pretty easy. Homemade pizza is so fantastic and worth doing. But what about gluten free pizza dough? Making your own from scratch can require some exotic ingredients that are not as widely available – tapioca flour, xantham gum, brown rice flour (although the Winn-Dixie near me stocks brown rice flour).</p>

The label she objected to was &#8220;Gluten Sensitivity,&#8221; under which label we specify whether or not the recipe is gluten-free and if there are any adjustments that should be made to the recipe to make it gluten-free.</p>
<p style="font-family: tahoma, verdana, arial; font-size: 12px; color: #000000; line-height: 22px;">She felt that &#8220;gluten sensitivity&#8221; implied that Celiac is not a serious disorder. While I understood her reasoning (and still do), at the time the jury was still out as to whether there were those whose symptoms, including fatigue and Irritable Bowel Syndrome, were improved on a gluten-free diet. I therefore chose to have the label we used be as inclusive as possible.</p>

			<content:encoded><![CDATA[<p style="font-family: tahoma, verdana, arial; font-size: 12px; color: #000000; line-height: 22px;">In my column, &#8220;10 Things you Need to Know About Reading Food Labels,&#8221; I explain the FDA rules on labeling foods things like &#8220;no cholesterol,&#8221; &#8220;low-calorie,&#8221; or &#8220;more fiber.&#8221; The FDA is now considering a proposed rule regarding the labeling of foods as gluten-free, under the Food Allergen and Consumer Protection Act. This would work much like the &#8220;no cholesterol&#8221; rule, in which a label can state &#8220;corn oil margarine, a no cholesterol food,&#8221; because ALL corn oil margarines do not contain cholesterol. Foods with a single ingredient, such as a non-wheat grain like millet, could then carry a gluten-free label because millet does not contain wheat gluten.</p>
<p style="font-family: tahoma, verdana, arial; font-size: 12px; color: #000000; line-height: 22px;">But what if these foods might be contaminated during processing, or even in the field? As you know, the only treatment for Celiac Disease is a gluten-free diet. Not long ago a group of researchers in Naples published a study that looked at whether a gluten-free diet would resolve the GERD-related symptoms in those with Celiac Disease.</p>
<p style="font-family: tahoma,verdana,arial; font-size: 12px; color: #000000; line-height: 22px;">The researchers recruited 29 men and women with newly-diagnosed, biopsy-proven Celiac Disease who had also experienced reflux symptoms, including heartburn or acid regurgitation, which had recurred at least three times per week for six months or more. These meals are much lower in calories – in the 200 range per serving.</p>

She doesn&#8217;t know if it was the strong  fishy flavor or the mushy texture, but she says that she could only  manage to choke down each bite with a big dollop of her mother&#8217;s tartar  sauce to mask the taste. For years she wouldn&#8217;t eat fish of any kind  (fortunately that&#8217;s not the case now).</p>
<p style="font-family: Tahoma,verdana,arial; font-size: 12px; color: #000000; line-height: 22px;">Her  story isn&#8217;t unusual. Those fish sticks have a lot to answer for &#8211; from  talking to patients it seems like those disgusting fish sticks have  turned thousands of people off of eating fish. It&#8217;s tough going,  sometimes, to convince people that fish is delicious if you cook it  right.</p>
<p style="font-family: Tahoma,verdana,arial; font-size: 12px; color: #000000; line-height: 22px;">Still,  with the popularity of chicken nuggets and the like among kids, it  seems like if you could find a good fish stick it might be a good way to  get your kids to eat fish. I&#8217;ve spent the last few months scouring my  local supermarkets for good fish options, to no avail. It seems like  almost every major brand of fish sticks &#8211; Gorton&#8217;s most notably &#8211;  includes monosodium glutamate (MSG) in their ingredients. <p style="font-family: Tahoma,verdana,arial; font-size: 12px; color: #000000; line-height: 22px;">It&#8217;s  the gluten in wheat flour that gives dough its elasticity. When the  leavening agent (yeast or otherwise) creates gasses, the dough traps the  gas but the gluten allows for expansion. It&#8217;s that interaction that  gives bread its lovely texture, and that&#8217;s hard to replicate without  gluten&#8217;s stretchiness. Today I&#8217;m going to make an exception because Celiac Disease is so challenging to diagnose. Stomach pain, diarrhea and bloating, some of the more common symptoms of Celiac, can also mean anything from gallbladder disease to Irritable Bowel Syndrome.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">At this time the only way to definitively diagnose Celiac Disease is by doing a biopsy of the small intestine, which is where Celiac Disease does its damage to the body. That said, in this health care environment we doctors can&#8217;t just send everyone with abdominal pain to have a small bowel biopsy &#8211; the current estimate is that less than 1% of the population has true Celiac Disease. Better to do other, less invasive tests first. Fortunately, there are several blood tests available, but they are not as definitive as a biopsy. One reason I don&#8217;t care for them is that there are so  many unusual ingredients in Lean Cuisine, Healthy Choice and the like  that it worries me.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">The one good thing about most gluten  free offerings is that they are more natural than the mainstream frozen  meals. There have been an increasing amount of gluten free offerings and  it&#8217;s good to find a company that has offerings that are OK choices. One study, for example, found that women with Celiac Disease became  fertile earlier in their lives and entered menopause sooner than those  women without Celiac Disease, while also having fewer children and more  miscarriages. Another study compared 150 fertile women versus 150  infertile women and found that 4 of the infertile women had sub-clinical  Celiac Disease, while none of the fertile women had it. Still, evidence  linking Celiac Disease to infertility is tenuous at best.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">Researchers in Italy tried to improve  on previous studies by recruiting 200 women who were actively being  treated with assisted reproduction techniques, either In-Vitro  Fertilization (IVF) or Intracytoplasmic Sperm Injection (ICSI). While there are  blood tests to detect the disease, the true confirmation of the  diagnosis requires doing a biopsy of several sites in the small bowel.  If the villi in the small bowel show damage, the diagnosis is confirmed.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">The only treatment for Celiac Disease  is to avoid gluten in the diet. While it&#8217;s obvious that those with  Celiac Disease need to avoid almost all bread products, newly-diagnosed  patients are also taught to recognize the &#8220;hidden&#8221; gluten in many  commercially prepared foods. Even restaurant or home-cooked meals that  are (presumably) prepared fresh from gluten-free products are considered  suspect if they are prepared in a kitchen that also contains gluten  products due to the risk of cross-contamination: a cooking utensil could  carry gluten molecules from a food containing gluten to an otherwise  gluten-free food.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">To avoid that risk, many of those with  Celiac Disease are extremely cautious about eating in restaurants or  kitchens not their own and will often prepare and take their own food  when dining with friends or family. I almost gave up, feeling that it must be a real challenge for folks with celiac disease. Our initial tasting of pastas didn&#8217;t go well, and gluten free breads have been tough going. With persistence I have been able to find some pastas that are pretty good and <a style="color: #006600;" href="http://www.drgourmet.com/reviews/010810.shtml" target="_blank">reported on them recently.</a></p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">Forging forward, I picked up a group of breakfast cereals for the tasting panel. The easiest one to find are Chex cereals. With the exception of their Wheat and Multigrain versions, Chex are gluten free. You know these guys because of Chex Mix recipes (what my mom used to call Texas Trash when I was growing up). That they are easily available is a good thing, but the main issue is they have only a gram of fiber in Corn Chex and the flavored versions. Rice Chex, however, is listed as 0 fiber (that&#8217;s right: <strong>zero</strong>). Subjectively, my informal research says that a dish has to have about 300 mg of sodium at least to taste &#8220;salty enough.&#8221; Looking at the Gluten Free Café Pasta Primavera in the grocery store I was a bit skeptical. This is a new product line from the folks at Hain Celestial Group and this dish contains only 260 mg of sodium.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">Its aroma while cooking was mostly of the veggies, especially the green beans and the peppers. The instructions call for cooking 3 minutes after piercing the plastic and then removing the plastic to stir. I was very careful stirring because rice pasta can fracture and break up. While I know a lot about it, exercise regularly myself and always talk with my patients about it, the Dr. Gourmet website is about food and nutrition. We&#8217;ve begun to incorporate exercise into our mission because of its importance and you&#8217;ll see more info in the future on this topic.</p>

Those of you who are regular readers know that I don&#8217;t believe the research supports taking vitamins. In the past I have used the premise of &#8220;doesn&#8217;t help but probably won&#8217;t hurt&#8221; when it comes to vitamins. There has been some recent evidence that I&#8217;ve written on that indicates taking vitamins might actually be bad for you. We&#8217;re a long way from knowing for sure, but this past week another study has been published that casts more doubt on the idea of &#8220;probably won&#8217;t hurt.&#8221; One of the medical students I work with who is very interested in exercise sent this one my way. <a style="color: #006600;" href="http://www.drgourmet.com/column/dr/2009/051809.shtml?phpMyAdmin=dbd41ebde3811bec32e2fb41528ee291" target="_blank">Exercise and Supplements</a></p>

The tuna works great with the mango salsa and the combination is not just great tasting but great for you.</p>

The good news is that there are many resources for folks trying to eat gluten-free. One of your best resources is your local Celiac Disease support group. Support groups help you to feel normal and provide you with a place to talk about the issues you face every day. In addition, your local support group is an invaluable source of information and experience. You don&#8217;t have to reinvent the wheel if you can instead rely on others to help discover new places to eat and shop. Since Celiac Disease affects approximately 1% of the American population, most cities or counties have a support group. These groups also welcome individuals who have wheat allergies or gluten-intolerance.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">It is always a good idea to seek out a support group for Celiac Disease when you are in the process of being diagnosed. Some doctors in the United States aren&#8217;t as educated about Celiac Disease as we might like, so it is important to find a physician who is experienced and knowledgeable about Celiac Disease and the many related health issues. Despite the name &#8220;morning sickness,&#8221; pregnancy nausea happens throughout the day for many women. It is most common in the first trimester but 13% of women had nausea past their 20th week of pregnancy.</p>

Researchers are not certain but the most common explanation is that a rise in HCG (human chorionic gonadotropin), a growth hormone plays a large part. I have started a few times to write up these recipes but each time I make theme they are a little bit different. There is a pattern to how I create this, however.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">I always start by placing a large skillet in the oven and preheating it to about 375°F. This is the pan that I will roast the protein in, making it easy to cook the meat but also allowing for simple clean up. The tortilla will crisp while the cheese melts slightly. Unless you are sure that a restaurant has a good understanding of Celiac Disease and cross-contamination, I suggest avoiding eating at most restaurants. A good way to be social and still eat safely is to bring your own food. I suggest calling a restaurant ahead of time to let them know you have Celiac Disease, and would like to bring your own meal to be reheated there. You can usually give the meal to the waiter, have them reheat it in the microwave, and serve it on a plate when the rest of your group is served (this is a great strategy for weddings or catered events).</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">Often, when you call to discuss this with the chef, restaurant staff may offer you some gluten-free alternatives. This is a great time to work with the staff and design a gluten-free meal, but be wary of hidden cross-contamination from less-than-knowledgeable staff. There&#8217;s a lot of research that I&#8217;ve reviewed to support this but much of this have been isolated studies on such things as whether legumes are good for you or the benefits of olive oil. I have felt for a long time that eating sensible regular meals and snacks is the key to being healthy and maintaining a healthy weight. In listening to my overweight and obese patients I often hear them say, &#8220;Well, I don&#8217;t eat during the day. I only eat dinner.&#8221; Sometimes they will talk about eating late in the day.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">While this is only anecdote, hearing it over and over has made me think that there&#8217;s something to this. Yet there&#8217;s not a lot of definitive research to prove that skipping meals during the day and eating only dinner contributes to weight gain. We do have some indirect information from studies showing that eating breakfast makes a difference in maintaining a healthy weight. There&#8217;s less info about lunch, however. We do have a lot of research on snacking. Everything from time of snacks, type of snack, how much is consumed and on and on.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">There&#8217;s also a lot of research on the volume of food and calorie density that helps us to understand how satisfying various meals and snacks are throughout the day. Just recently there was published a great addition to our knowledge with a group of researchers in Sweden reporting on whether meal patterns might have an effect on obesity. <a style="color: #006600;" href="http://www.drgourmet.com/column/dr/2009/042009.shtml?phpMyAdmin=dbd41ebde3811bec32e2fb41528ee291" target="_blank">Three Meals a Day</a></p>

This is a great time to make use of gluten-free products made by Glutino, Pamela&#8217;s, Bob&#8217;s Red Mill, and other labeled gluten-free products. These product lines offer pasta, bread, cookies, pretzels, and cereals. Be sure to read labels on gluten-free products as well. Some are made from whole grains such as quinoa or brown rice, which are great sources of fiber. I suggest that you avoid stocking up on a gluten-free product until you&#8217;ve tried it; however, once you&#8217;ve decided that you like the product, feel free to stock up from sites like glutenfreemall.com or amazon.com. I have found that each grocery store stocks different items that I use as mainstays. This has carried over into folk&#8217;s dinner tables at home and portions have gone from big to bigger to huge. So when you&#8217;re considering dinner ideas think in terms of right-sizing your meal.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">Begin with the main course. By that I mean the fish, lean meat, shellfish, chicken, turkey, lamb, etc. that you will have. The rule of thumb is 4 ounces by weight for each portion. When you are reading recipes keep this in mind because many call for double or even triple this amount. With a 4 ounce serving coming in at around 150 to 200 calories it&#8217;s easy to see how in today&#8217;s world folks can easily get too many calories. <a style="color: #006600;" href="http://www.drgourmet.com/column/dr/2009/041309.shtml?phpMyAdmin=dbd41ebde3811bec32e2fb41528ee291" target="_blank">What to Put on Your Dinner Plate</a></p>

They are similar in size to white mushrooms but are a light cocoa color and have a firmer texture. They are much more flavorful than white mushrooms, having a richer, earthy taste that activates the umami taste buds. Their flavor has often been referred to as &#8220;meaty&#8221;.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">Portobello mushrooms are actually large crimini mushrooms and, because of the savory meaty flavor, have become popular in the last few years. As mushrooms mature, the ring that protects the spores breaks and as a result there is loss of moisture. It was a standby in my restaurant days and it&#8217;s unfortunate that you don&#8217;t see it on many menus these days. It is so simple yet so perfect. The key is to cook the steak at a little lower heat so as to not burn the cracked pepper. The result brings a more savory flavor to the pepper and mellows the spiciness.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">Traditional recipes call for using heavy cream and you could, if you like, choose to use it instead of the sour cream. It will add a few more calories, but I don&#8217;t use it day to day because I don’t keep it on hand. The sour cream also adds a bit of tartness that I like in the sauce. You have to make sure the sauce is not too hot when you add it to the sour cream or it will curdle the sauce.</p>
<p style="font-family: verdana,arial,helvetica; font-size: 12px; color: #000000; line-height: 22px;">This recipe is safe for Coumadin (warfarin) users, is low in sodium, and is gluten-free. Those who are lactose intolerant and those with GERD / Acid Reflux should avoid it.</p>
